Celebrity chef Nick Nairn visited Shetland in 2022 to take part in the Taste of Shetland Food and Drink Festival. He was impressed with the quality and excellent provenance of the fresh ingredients including seafood, vegetables and meat. Nick discovered a favourite Shetland ingredient – sassermaet, a spiced beef mince made from local cattle which Nick describes as "probably my favourite beef of all time".
