Grilled Salmon with Black Bean Sauce

Ingredients:

  • Shetland Salmon

  • Onion

  • Red & Green Peppers

  • Minced Garlic

  • Minced Ginger

  • Black Bean Garlic Sauce

  • 4-5 oz Water

  • Soya Sauce

  • Salt

  • 2-3 tbsp of Sugar

  • Cornflour mixture: 1 tbsp of cornflour to 4 tbsp of water, mixed well

  • Oil


Instructions:

  1. Chop up the salmon into cubes
  2. Dice peppers and onions
  3. Grill the salmon until a golden colour
  4. Heat up a frying pan with ½ tbsp of oil
  5. Fry the salmon, peppers and onions all together
  6. Put in the minced garlic and ginger and fry
  7. Put in 2 tablespoons of black bean garlic sauce and mix with 4-5 oz of water
  8. Stir while adding 1 tbsp of soya sauce, a pinch of salt, 2-3 tbsp of Sugar and 1-2 tbsp of cornflour mixture to thicken up the sauce
  9. Plate up salmon and top it off with peppers, onions and spring onions or any other toppings if you wish
