Ingredients:
- Chicken breasts - 4
- Bread crumbs - (fresh or dried)
- Salt and pepper -
- Cheddar cheese -
- Large egg - 1 (beaten)
- Vegetable oil - (for frying)
Instructions:
- Preheat oven to 180 C gas mark 4
- Flatten the chicken breasts between two pieces of cling film
- Dip the chicken in the beaten egg and coat with bread crumbs
- Heat a small drop of oil in a frying pan and brown the chicken on both sides, seasoning with salt and pepper
- Place the cooked chicken on a baking tray and top with some slices of cheddar cheese
- Bake for 5 minutes, or until the cheese has melted
- Serve with tattie wedges, etc
