Ingredients:
- Courgettes - 3 medium
- Olive oil - 4 tbsp
- Lemon - 1/2 (juice only)
- Tahini - 2 tbsp
- Thick natural yoghurt - 2 tbsp
- Parsley - 50 grams (chopped)
Instructions:
- Slice courgettes lengthwise, thinly. Fry in the olive oil for about a minute on each side until nicely brown.
- Dry courgettes on kitchen paper, put into a bowl and roughly mash them.
- Add lemon juice, tahini, yoghurt and parsley. Season well and mix thoroughly.
Both these dips can be served with hot pitta bread or a crisp homemade oatcake.
