There is some wonderful news for all you chocolate lovers!

Regular Taste of Shetland readers might remember the interviews I posted about the demonstrators at the Shetland Food Fair 2015 last Autumn. One of these demonstrators was Dave Williams, who mentioned in his interview that he was planning a small chocolate project that would hopefully take off in the future.

Sometimes I have an idea in my head, I know what the end product should look like then I spend my time getting to that end point.

Since I last spoke with Dave he's been a very busy man, learning all about the ins and outs of artisan chocolate production. He had an idea and that idea has manifested.

While Dave while learning chocolate techniques recently he had an idea for a northern lights themed chocolate filled with a raspberry ganache. He wasn't expecting such a successful result - glittering swirls of green, yellow and touches of pink shimmering across the surface of his dome shaped chocolates - and the Mirrie Dancers Chocolatier was born!

Dave will be in Scoop Wholefoods today from the late morning onwards with his very first production run all boxed up and ready to taste test.

He is currently producing his handmade artisan chocolates in small batches in his own kitchen in Lerwick, but he is in talks about opening up shop premises in town. Watch this space!
